Our household is a-bustle with busyness these days. Different schedules and weird hours have meant dinners of delivery from Wonton house (delish - however a little calorie/fat rich for sustained eating), quick 'meals' at the bar, or a night of popcorn.
So, this Sunday I spent the afternoon cooking and preparing healthy meals - mostly individually packed - so we could each grab and go, whenever dinner worked in our schedule .... salmon, chili, chicken, pesto, roasted veggies, squash and quinoa, oh my! It was actually fun to make that much food all at once, and pretty satisfying to see it labeled, packaged, and ready for the freezer.
Holy domestic.
